Powdered HSS steel is the latest steel material made by the powder metallurgy method, in which molten metal is solidified in an atomized form to produce powdered steel, which is then pressed and sintered, and forged and rolled. Compared to the conventional melting method, there is no segregation, the structure is uniform and fine, the hardness is high, and the edge life is good and machinability is high. Damascus is the process of forging two kinds of steels of different hardness into layers, and by polishing the blade, the hard steel shines and the soft steel gets dulled, creating a unique pattern on the surface like the grain of wood. This ripple pattern is called Damascus steel. The beautiful rippled pattern of Damascus steel is well known, and it is very popular among foreign cooks.
Uses of Damascus Steel
Petit Knife means "small knife" in Japanese, and it is used for preparations and small tasks such as peeling and thinning vegetables and chopping. It is also useful for making handiwork cuts with the tip of the blade. Professional chefs often use this knife for peeling and crafting, so they often use a short 120mm blade. For home use, the 150mm size is popular.
