The Wa-Gyuto is a Western Chef knife with a traditional Japanese handle, ideal for Japanese chefs who are more accustomed to this unique shape.

Ginsan Steel(Silver #3)

Steel Material
We use Gin-san(Gingami No.3)steel, which is a highly rust resistant steel developed by Hitachi Metals, Ltd. through their refining process that still uses Japan's time-honored metal working and tatara fumace smelting techniques.
Of the Gingami metals, which have carbon added to 12-14% chrome, Gin-san contains even greater carbon content for a harder steel.
Experts craftsmen spend long hours and use careful techniques to craft each blade. Since the metal is especially hard, the knives hold their edge for a long time and do not rust easily

Our Ebony handles are made from a combination of Ebony Wood and Nickel Silver. Each piece is cut, combined and shaped by hand. The final result is beautiful handles with unique contrast.

Full Steel

Forging Process
A full steel blade or Mono-Steel blade means that only 1 type of steel has been used in its construction from spine to edge.Making knives with a single steel type requires expert attention during the manufacturing process to ensure the blade does not become overly brittle or warped.Differentiating a high quality Mono-Steel Blade from a low quality Mono-Steel blade can be quite difficult at a quick glance.
